Ingredients

  • Shredded green cabbage – 4 cups
  • Thinly sliced cucumbers – 1 cup
  • Thinly sliced celery – 1 cup
  • Grated carrots – ½ cup
  • Mayonnaise – ½ cup
  • Apple cider vinegar – 2 tbsp
  • Dijon mustard – 1 tbsp
  • Sugar – 1 tbsp
  • Freshly ground black pepper – 1 tsp
  • Salt – ½ tsp
  • Chopped fresh parsley – ¼ cup

Instructions

1. Combine Vegetables: In a large bowl, mix together the shredded cabbage, cucumbers, celery, and grated carrots.

2. Make the Dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, black pepper, and salt until smooth.

3. Mix & Chill: Pour the dressing over the vegetable mixture and toss until evenly coated. Stir in chopped parsley for freshness.

4. Refrigerate: Cover and chill for at least 1 hour to let the flavors meld.
