Southern 3-Ingredient Vidalia Onion Dip

This creamy baked onion dip is an easy appetizer that always seems to disappear quickly. Sweet Vidalia onions, creamy mayonnaise, and melted cheese come together in one dish and bake until hot, bubbly, and golden around the edges.

With only three main ingredients, it’s simple enough for a casual snack but delicious enough for cookouts, game days, holidays, and family gatherings.

Ingredients

  • 3 cups finely chopped Vidalia onions, about 2 large onions
  • 2 cups shredded Monterey Jack cheese or mild cheddar
  • 1 cup mayonnaise

Instructions

  1. Prepare the oven: Preheat the oven to 375°F (190°C). Lightly grease an 8-inch square baking dish or a similar-size oven-safe dish.
  2. Chop the onions: Finely chop the Vidalia onions into small, even pieces so they soften nicely as the dip bakes.
  3. Mix everything: Combine the onions, shredded cheese, and mayonnaise in a medium bowl. Stir until the ingredients are evenly distributed.
  4. Fill the dish: Transfer the mixture to the prepared baking dish and spread it into an even layer.
  5. Bake: Bake for 25 to 35 minutes, or until the cheese is melted and bubbling and the top is lightly golden.
  6. Rest and serve: Carefully remove the dip from the oven and let it cool for about 5 to 10 minutes. Serve warm with your favorite dippers.

Best Dippers

This creamy onion dip is especially good with:

Tortilla chips
Potato chips
Toasted baguette slices
Buttery crackers
Carrot sticks
Celery
Bell pepper strips

Tips & Variations

  • Choose a mild cheese: Monterey Jack or mild cheddar gives the dip a smooth, familiar flavor.
  • Want more cheese on top? Sprinkle a little extra shredded cheese over the surface before baking for a deeper golden crust.
  • Add some heat: A pinch of black pepper or a little finely chopped jalapeño can add extra flavor.
  • For a lighter version: Light mayonnaise can work, but avoid fat-free mayonnaise because it may become watery when heated.

Make-Ahead

The dip can be assembled, covered, and refrigerated for up to 24 hours before baking. If baking it directly from the refrigerator, allow a few extra minutes of cooking time.

Storage

Refrigerate leftovers in a covered container and use within 3 to 4 days. Reheat in a small baking dish at 350°F (175°C) until hot and bubbly.

For food safety, don’t leave the dip at room temperature for more than 2 hours, or more than 1 hour when the temperature is above 90°F (32°C).

This simple Vidalia onion dip is creamy, cheesy, and packed with sweet onion flavor. It’s an easy recipe to keep on hand whenever you need a warm appetizer that requires very little preparation.
