Amish Chocolate Peanut Butter Pie

Ingredients

  • 9-inch pie crust 1, already baked
  • All-purpose flour 1/2 cup
  • Granulated sugar 1 cup
  • Salt 1/2 teaspoon
  • Full-fat milk 1/2 cup
  • Egg yolks, beaten 3
  • Peanut butter, creamy 1/2 cup
  • Unsalted soft butter 2 tablespoons
  • Vanilla flavoring 1 teaspoon
  • Whipped cream 1 cup
  • Pulverized sugar 2 tablespoons
  • (Optional) Chopped peanuts or chocolate shavings For garnish

 

 

Step-by-Step Instructions

Filling Preparation

  1. Combine Dry Ingredients Place your flour, salt, and granulated sugar in a medium saucepan, then mix and combine to make sure that all the dry components merge well before starting the filling preparation.
  2. Add Milk Gradually Mix and combine the dry mixture, then add full-fat milk gradually. You must stir constantly to ensure that no pockets of dry flour remain, then stir until the mixture is smooth and well combined.
  3. Cook the Mixture Over medium heat, bring the mixture to a boil and stir continuously. When it reaches boiling point, continue to cook for one more minute, stirring occasionally and ensuring the mixture thickens.
  4. Add Egg Yolks When the mixture in the saucepan is heated, remove it from the heat source. Gradually add a small portion of the thick mixture into the beaten egg yolks while stirring, then return the yolk mixture to the saucepan.
  5. Simmer and Stir Over low heat, place the saucepan and continue to stir for another 2 minutes. This step delivers a smooth filling and is thickened.
  6. Add Peanut Butter and Flavorings Off heat, mix in the creamy peanut butter, unsalted butter, and vanilla flavoring. You should have a butter and peanut butter that is folded in and incorporated fully to form a smooth filling.

 

Assembling the Pie

  1. Let the Filling Cool Once the filling is done cooking, let it cool to room temperature. This is important for achieving the desired texture and consistency.
  2. Fill the Pie Crust Carefully pour the filling into the pre-baked 9-inch pie crust. Using a spatula, spread the filling until the top is smooth and flat for an even layer.
  3. Chill the Pie Take the pie and place it in the refrigerator for three hours minimum until the filling is fully set. The filling is firm. This resting time is important as the filling set and the flavors blend harmoniously.

 

Prepare the Whipped Cream Topping

  1. Whip the Cream This is done just before serving, whip the heavy cream and powdered sugar together until soft peaks form. The light, fresh whipped cream serves as a nice contrast to the rich creamy peanut butter filling.
  2. Top the Pie Once the pie is set, spread the whipped cream and top it off with a sprinkle of chopped peanuts or chocolate shavings, if desired.
