Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 cups cooked egg noodles

How to Make Amish Winter Bliss:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Stir in the carrots, green beans, and corn, cooking for about 5 minutes until they begin to soften.
  5. Add the diced tomatoes, beef broth, salt, pepper, and thyme. Bring to a simmer and let cook for 10 minutes.
  6. Stir in the cooked egg noodles and half of the shredded cheddar cheese.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Sprinkle the remaining cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

 

Variations & Tips

For a lighter version, you can use ground turkey or chicken instead of beef. Feel free to swap out the veggies for whatever you have on hand—zucchini and bell peppers work great too. If you prefer a spicier kick, add a pinch of red pepper flakes. For a gluten-free option, use gluten-free noodles or rice instead of egg noodles.
