If you want to use up leftover mashed potatoes, try these creative Mashed Potato Muffins, which are a cheesy, mashed potato side to any meal. They are soft and fluffy on the inside, are beautifully golden-brown on top, and include lots of cheddar cheese and sour cream, plus some bacon if you choose. They are sure to compliment any meal.
Ingredients:
- 4 cups Mashed potatoes (leftover or freshly made)
- 1 cup Shredded cheddar cheese
- ½ cup Sour cream
- 2 Large eggs, lightly beaten
- ¼ cup Chopped green onions
- ¼ cup Crumbled cooked bacon (optional)
- Salt and pepper, To taste
How To Make Mashed Potato Muffins:
Step 1: Preheat your oven to 375°F (190°C), and spray the muffin tin with some oil spray.
Step 2: In a large bowl mix the mashed potatoes, cheddar, sour cream, eggs, green onions, and bacon (if using), and add salt and pepper to taste. Mix well.
Step 3: Put the potato mixture in the muffin tin, and fill each cup to the top.
Step 4: Bake for 20-25 minutes, until the muffins have set and tops are golden brown.
Step 5: Finish the muffins by letting them cool in the tin, then ease them out with a knife or small spatula. Enjoy!
