Mozzarella Onion Rings

Ingredients

2 large onions, sliced into thick rings
8 mozzarella sticks, cut into pieces
1 cup all-purpose flour
2 eggs, beaten
2 cups bread crumbs
1 tsp Italian seasoning
1 tsp garlic powder
Salt and pepper, to taste
Cooking spray, for greasing

Directions

  1. Preheat & prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Prepare onions & cheese: Separate the onion slices into rings. Insert a piece of mozzarella into each ring.
  3. Set up coating stations:
    Dish 1: Flour
    Dish 2: Beaten eggs
    Dish 3: Bread crumbs mixed with Italian seasoning, garlic powder, salt, and pepper
  4. Coat the rings: Dredge each stuffed onion ring in flour, shake off excess, dip in eggs, then coat in the bread crumb mixture.
  5. Bake: Place rings on the prepared sheet, lightly spray tops with cooking spray. Bake 15–20 minutes until golden and crispy.
    Serve: Enjoy hot with your favorite dipping sauce!
