Ultra Soft, Melt-in-Your-Mouth Banana Bread
This Melt-in-Your-Mouth Banana Bread truly lives up to its name. Made with a full cup of butter and three ripe bananas, it bakes into an incredibly moist loaf with a soft, tender crumb that’s almost cake-like. Cinnamon brings classic warmth, while a hint of nutmeg adds gentle depth that perfectly balances the natural sweetness of the bananas. It’s the kind of recipe that fills your kitchen with a bakery-style aroma you can’t resist.
Ingredients
- Unsalted butter, softened – 1 cup (2 sticks)
- Ripe bananas, mashed – 3
- All-purpose flour – 1¾ cups
- Granulated sugar – ¾ cup
- Eggs, beaten – 2
- Vanilla extract – 1 teaspoon
- Baking soda – 1 teaspoon
- Ground cinnamon – 1 teaspoon
- Salt – ½ teaspoon
- Ground nutmeg – ¼ teaspoon
- Chopped walnuts (optional) – ½ cup
Directions:
Step 1: Prepare the Pan
Preheat the oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan to ensure easy release after baking.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until evenly combined.
Step 3: Cream Butter and Sugar
In a large bowl, beat the butter and sugar until light, fluffy, and pale in color. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Step 4: Combine
Gradually add the dry ingredients to the butter mixture, alternating with the mashed bananas.
Golden Rule: Mix just until combined. Overmixing can make the bread dense instead of tender.
Step 5: Add Nuts (Optional)
If using walnuts, gently fold them into the batter until evenly distributed.
Step 6: Bake
Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Step 7: Cool
Let the bread cool in the pan for 10 minutes to set, then transfer to a wire rack to cool completely before slicing.
