Chocolate Filled Cookie Cups

Servings: 12

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup semi-sweet chocolate chips (for filling)

 

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the vanilla extract and salt.
  4. Gradually add the flour to the mixture, stirring until just combined.
  5. Fold in the mini chocolate chips.
  6. Divide the dough into 12 equal portions and press each portion into the bottom and up the sides of a greased muffin tin to form a cup shape.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and immediately press a few semi-sweet chocolate chips into the center of each cookie cup to create the filling.
  9. Allow the cookie cups to cool in the muffin tin for about 10 minutes before transferring them to a wire rack to cool completely.

For a nutty twist, add 1/4 cup of chopped nuts like pecans or walnuts to the dough. If you have peanut butter lovers in the house, try adding a teaspoon of peanut butter to the center of each cup along with the chocolate chips. For a festive touch, sprinkle some colored sugar or sprinkles on top before baking. If you have picky eaters, you can substitute the chocolate filling with a small dollop of jam or a piece of caramel candy.
