My uncle found this in a 1959 church cookbook at an estate sale. Made it for Father’s Day and now my kids are requesting it weekly.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 large yellow onion, thinly sliced
  • 1 cup ketchup
  • 1 packet dry onion soup mix

Instructions

  1. Prepare the oven: Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the chicken in one layer.
  2. Add the onions: Spread the sliced onion evenly across the bottom of the baking dish.
  3. Arrange the chicken: Place the chicken thighs skin-side up over the onions.
  4. Make the glaze: Stir the ketchup and dry onion soup mix together in a small bowl until smooth.
  5. Add the sauce: Spoon the ketchup mixture evenly over the chicken thighs.
  6. Bake: Bake uncovered for 50 to 60 minutes, or until the chicken reaches a safe internal temperature of 165°F (74°C) and the onions are tender.
  7. Rest and serve: Let the chicken rest for about 5 minutes. Spoon the softened onions and pan sauce over each serving.

Tips & Variations

  • Try chicken breasts: Bone-in chicken breasts can be used instead. Begin checking them earlier because cooking time may vary depending on their size.
  • Add more onions: If you love caramelized onions, add another sliced onion to create an even heartier layer underneath the chicken.
  • Prepare ahead: Assemble the dish, cover it, and refrigerate it for a few hours before baking.
  • Don’t waste the sauce: Serve the chicken with mashed potatoes, rice, or buttered egg noodles so you can spoon the flavorful pan juices over the top.
