Southern Nana’s Meatloaf Recipe

Ingredients:

For the Meatloaf

  • 2 lbs Ground beef (80/20 blend)
  • 1 cup Breadcrumbs
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1/4 cup Milk
  • 2 Large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Smoked paprika

For the Glaze

  • 1/2 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Apple cider vinegar

 

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line a baking sheet or grease a loaf pan.
  2. Mix Meatloaf Ingredients: Combine ground beef, breadcrumbs, onion, garlic, milk, eggs, Worcestershire sauce, salt, pepper, thyme, oregano, and paprika. Mix gently until combined.
  3. Shape Meatloaf: Transfer mixture to prepared pan and shape into a loaf.
  4. Prepare Glaze: Whisk together ketchup, brown sugar, Dijon mustard, and apple cider vinegar.
  5. Glaze and Bake: Spread half the glaze over the meatloaf. Bake for 1 hour. Spread remaining glaze and bake for 15-20 more minutes, or until internal temperature reaches 160°F (71°C).
  6. Rest and Serve: Let meatloaf rest for 10 minutes before slicing and serving.
