2 large yellow onions, thinly sliced (about 6 cups)
1 (10.5 oz) can condensed cream of mushroom soup
1 (1 oz) packet dry onion soup mix
1 cup low-sodium beef broth or water

 

Directions

  1. Arrange the sliced onions evenly across the bottom of a 5- to 6-quart slow cooker.
  2. Place the chuck roast on top of the onions. If the roast has a noticeably fattier side, place that side facing up.
  3. In a medium bowl, whisk together the cream of mushroom soup, dry onion soup mix, and beef broth or water until mostly smooth.
  4. Pour the soup mixture over the roast, letting some of it run down around the sides. Spoon a few onions over the top of the beef.
  5. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is very tender and easily pulls apart with a fork.
